friday night and saturday morning

friday night, i made another one of these dinners that i make quite often. sauteed shrimp with pasta.





saturday morning i made loaded hashbrowns. inspired by the loaded tater tots at logan's alley

breakfast may22

i made some great breakfast today! i was supposed to have class from 8-12, and then work from 1-5, but class let out ridiculously early, so i stopped at the grocery store, picked up a few things, came home and made this:

eggs benedict and florentine combined, and hashbrowns




here's the process:
1. made coffee (always number 1 in my book for breakfast!)
2. started 2 skillets with a little butter and one small saucepan with half a stick of butter.
3. in the small saucepan, once the butter melted, i added 1 cup of water and the hollandaise sauce mix (not worth it making your own, you can try it once for fun, but it's so much work!). once that came to a simmer, turned the burner off and covered it. it stays at the perfect temp for like an hour this way
4. in one skillet, dropped in the white parts of some green onions, chopped. then a big handful of frozen shredded hashbrowns, and some salt and pepper. just watched that and turned every once in a while, then added some of the green parts of the green onion just at the end.
5. halved an english muffin and dropped each half into the toaster
6. in the other skillet, put in 2 large round pieces of ham. then 2 large eggs. turned the ham after a few minutes, as well as the eggs. just after the eggs were turned, i dropped a slice of mild cheddar cheese on top of each one for melting. (traditionally, eggs benedict are done over medium, and that's the way we like them, but you can go longer or shorter if you want the yolks done more or less)
7. assembly: english muffin half, slice of fresh tomato, some baby spinach leaves, slice of heated ham, one egg with the melted cheddar, hollandaise sauce, then some chopped flat leaf parsley to top it off. (2x for both halves of the english muffin) then the hashbrowns on the side with some parsley on that too. added some strawberries for a side, and voila... a great homemade breakfast!!!!

finally...

...made dinner again. haven't been feeling too well, but gabe was busy yesterday and so i made a quick lunch. i didn't get pictures again, just because we were in such a rush, but here's what i made:
couscous with sauteed shrimp:
couscous:
i sauteed some diced green peppers with olive oil just for a minute, then added diced tomatoes and 2 cups of chicken stock, dried italian seasoning, and salt and pepper to taste. brought to a boil and added the couscous, cut the heat and covered for 5 minutes. fluffed with a fork just before serving.
shrimp:
heated some olive oil in a large skillet with minced garlic, red pepper flakes and dried thyme. then added about 20 med. large sized shrimp. flipped after a few minutes, and served over the cooked couscous.

super easy, very quick healthy meal. i wanted to make something that wasn't too heavy so gabe wouldn't feel sleepy in like a half hour. good balance of protein, carbs and veggies. pretty happy with how this one turned out.

1. i feel like my new turquoise flats from urban outfitters are a neutral. i wear them with everything. turquoise is the new black???

2. my favorite food to make and eat is mexican, but growing up as a kid, i hated mexican food more than anything in the world. it made my stomach upset to think about eating it. the first time i had ever been to a taco bell was just like 4 years ago.

3. i like to dress up when i cook. i dress the part. when i make mexican, i wear a long mexican print dress with sandals. when i make chinese or japanese, i wear white pants, black ballet slippers and a black shirt ( i guess to me, that is chinese? haha! maybe it's more karate than chinese) french/american bistro = super dressy black dress with pearls and heels.

4. i like the smell of skunks

5. i'm very biased - i only chew my food on the right side of my mouth.

6. i can pull my arms out of their sockets. gross huh?

this week

i have been not really with it. i have been very sick all week (still am, but i think i'm getting over it) i'm pretty sure i had/have strep throat. i just am too cheap to go to a doctor for 120 bucks to have him tell me that. i figure, if i don't feel like i'm dying... i'll probably get over it. haven't made any food at all this week, in fact, anything other than ice cream or campbell's chicken noodle soup sounds horrible. summer session starts monday... oh boy! well, i guess i don't start until tuesday. this semester = grant writing class on T and R from 830 am til noon. i don't know how i'll last.
